Macaroni With 3 Cheeses

Ingredients

    500g Macaroni
    2 tsp Margarine
    1/4 Cup Plain Flour
    2 Cups of No Fat Milk
    1/2 Cup Light Ricotta Cheese
    1/2 Cup Grated Parmesan Cheese
    1/2 Cup Light Mozzarella ( or tasty)
    1 Tsp Dijon Mustard
    2 Tomatoes Sliced
    125g (1/2 cup) Shredded Basil Leaves

Directions

Cook pasta according to directions. Drain well and return to the pan.
Melt margarine in a saucepan, add flour, cook for 1 minute. Remove from heat.
Gradually blen in skim mil and return to heat. Cook, stirring until sauce boils and thickens. Simmer for 3 minutes.
Blen sauce, ricotta, mozzarella and only half of the parmesan cheese, mustard and stir through pasta.
Spoon into a casserole dish, arange tomato and basil on top. Sprinkle with remaining parmesan chesse.
Bake in a moderate ove (180C) for 10 minutes or until golden.
Serve immediately with salad or steam vegies.
Will serve 6 -8
