Rainbow Chicken Casserole

Introduction

Ingredients

    6 boneless chicken breast, no skin
    Rainbow Rotini, 1 12-oz package
    1 12-oz can evaporated skim milk, fat free
    4 Tbsp grated parmesan cheese
    1 can Cream of Celery soup
    1 C dry bread crumbs
    2 Tbsp Smart Balance Butter Spread
    Salt, dash
    Pepper, Dash

Directions

Boil chicken in water for 15 minutes. While boiling, combine soup and evaporated milk, stirring frequently until boiling. Stir inparmesan cheese until melted. Remove from heat. Place chicken pieces in large casserole dish. Allow to cool slightly before cutting into pieces while noodles cook in boiling water used for chicken. I use a food chopper to make chicken pieces very small, but that is optional. When noodles are cooked, pour into casserole. Add chopped chicken and pour soup mixture over all, stirring to coat. Spread evenly in dish. Melt butter spread in small bowl. Stir in bread crumbs and a dash of salt and pepper. Sprinkle evenly over casserole. Bake at 350 degrees for 30-35 minutes.
