Ingredients

    1 TEASPOON OLIVE OIL
    ¼ LARGE ONION CHOPPED
    FRESH SAGE 5 LARGE SPRIGS CHOPPED
    1 HEAD CAULIFLOWER CHOPPED
    2 TABLESPOONS CALDO DE POLLO (CHICKEN STOCK BASE)
    4 OZ CHEDDAR CHEESE CUT INTO CUBES

Directions

1. IN A LARGE SOUP POT SAUTE ONION AND SAGE IN THE OLIVE OIL TIL TENDER
2. ADD CHOPPED CAULIFLOWER AND SAUTE FOR ABOUT 5 MINUTES
3. ADD CALDO DE POLLO AND STIR TIL BLENDED
4. ADD WATER JUST TO COVER CAULIFLOWER
5. BRING TO A BOIL, COVER AND SIMMER TIL CAULIFLOWER IS COMPLETELY COOKED.
6. POUR ALL INTO A BLENDER AND BLEND TIL SMOOTH
7. POUR BACK INTO POT AND ADD CHEDDAR CHEESE
8. HEAT TIL CHEESE COMPLETELY MELTED
9. IF YOU WANT YOU CAN “FINISH” THE SOUP WITH ABOUT ¼ CUP OF HEAVY CREAM OR FOR A LOWER CALORIE CREAMINESS, SUBSTITUTE A CAN OF FAT FREE EVAPORATED MILK FOR THE WATER EARLIER IN THE RECIPE (182 CAL PER SERVING FOR THIS VERSION)

I DIDN'T NEED TO ADD ANY SALT TO THE SOUP AS THE CHICKEN BASE HAD PLENTY. ALSO GREEN ONIONS OR CHOPPED CHIVES ARE A NICE TOPPER WITH A SMALL DOLLOP OF FAT FREE SOUR CREAM.
