Introduction

Ingredients

    15 oz. round steak, cut in 4 serving pieces
    1 large onion, thin sliced
    2 shallots, thin sliced
    13 oz. potatoes, peeled and cut into chunks
    9.5 oz carrots, peeled and cut into thick slices
    4.75 oz. Brussels sprouts, trimmed
    2.25 tsp low-sodium beef base
    3 cups hot water
    1/4 tsp kosher salt
    1 tsp Worchestershire sauce

Directions

Combine water, beef base, salt and Worchestershire sauce, set aside. Brown beef in pan sprayed with non-stick spray. Remove. Fry onions and shallots in same pan, scraping up beef drippings, until onions are limp and starting to brown. Add carrots and potatoes, stir to combine. Lay browned beef into the vegetable mixture and cover with the beef broth. Bring to a boil, reduce heat, cover and simmer for 30 minutes. Turn beef,stir vegetables and add Brussels sprouts. Simmer, covered another 30 minutes. Serves 4.
