Number of Servings: 6


    1 butternut squash
    3 cloves of garlic
    1 granny smith apple
    1 medium yellow onion
    .33 cup fat free half and half.
    Water--enough to thin to desired consistency

    spices: cumin, salt, black pepper, red pepper flakes, paprika


*cut squash in half and seed
*drizzle with 1/2 olive oil and season with salt and pepper
*roast squash at 350 for 30-45 minutes
*in sauce pan, sautee onions, garlic, peeled apple, and spices over medium low heat until soft
*in blender--blend small batches of cubed squash and onion mixure with a little water until all is blended
*in soup pot-put pureed veggies in with half and half and simmer on low heat until flavors combine.

makes approx 6 1 cup servings.

garnish with sour cream, parmesan cheese, or fresh parsley...calories not included.
