Ingredients

1 large potato, peeled and cubed
1 medium zucchini, cubed
1/2 medium onion, diced
1 large chicken breast, boneless skinless or 3 boneless skinless chicken strips, cut into 1 inch pieces
2 tsp poultry seasoning
dash each of salt, pepper, and garlic powder.
Directions
Boil the potatoes with salt and pepper for about 5 minutes. This will make them cook faster in the skillet.
Add chicken to a large nonstick skillet, cook 3 minutes or until no longer pink in the center. Next add onions, zucchini, and potato(drained) to skillet. Sprinkle the poultry seasoning, salt, pepper and garlic powder to taste. add 1/8 cup water to the bottom of the skillete, cover and let simmer for 3 minutes, stirring occasionally. Then remove cover to evaporate water. Serve when water is completely gone. Makes a great main course, one skillet meal and goes well with fruit or a salad.
