Pork Paprikash (Weight Watchers)

Introduction

Adaptation on a much loved Hungarian dish. Adaptation on a much loved Hungarian dish.
Number of Servings: 4

Ingredients

    4 4-oz boneless pork loin chops, trimmed of fat
    Fresh pepper to taste
    1 C low sodium chicken broth
    1/2 tsp onion powder
    1/4 tsp garlic powder
    2 C fresh spinach, stemmed
    2 tsp paprika
    2 TBL low-fat sour cream

Directions

1) Pound out pork chops to 1/4 inch thick between 2 pieces of wax paper or plastic bag with smooth side of meat mallet or heavy pan. Season chops with pepper.

2) Spray large non-stick skillet (or iron skillet) with nonstick spray and set to med-hi heat. Add pork chops and cook until browned and cooked through (approx. 2 min. per side). Transfer to plate, cover & keep warm.

3) Add broth to skillet, scraping up any brown bits from the pan. Stir in onion powder, garlic powder, and spinach. Reduce heat, cover and simmer approx. 5 minutes.

4) Stir in paprika. Cook uncovered, 20 sec. Stir in sour cream and heat 10 sec. (do not boil). Add chops to skillet with any juices into the sauce. Cover skillet and keep warm on low 5 min.

1 chop per serving plus 1/2 C sauce & spinach
