Chicken a la King

Introduction

An easy & nostalgic dish, and when served with 1 cup egg noodles or rice, it's still under 500 calories! An easy & nostalgic dish, and when served with 1 cup egg noodles or rice, it's still under 500 calories!
Number of Servings: 7

Ingredients

    4 chicken breasts
    2 cups mushrooms
    1.5 cups chopped onions
    100 grams hard margarine
    1 green pepper
    1 red pepper
    1 cup homemade chicken stock
    1 cup water
    1 cup milk
    1 gram black pepper (to taste)

Directions

Chop the chicken breasts, mushrooms & peppers. Sauté the chicken half of the margarine over medium heat until chicken is browned. Add the vegetables and the rest of the margarine, continue to sauté until the peppers and mushrooms are soft and the onions are translucent. Remove from the heat, add the flour and pepper, return to low heat, stirring, until the mixture bubbles. Slowly stir in the stock, milk and water. Turn the heat up to boiling, continuing to stir. Keep at a boil for several minutes, stirring, until the mixture thickens. Serve over rice or egg noodles.
