Vegetarian Chicken Quesadilla

Introduction

I love quesadilla but HATE the evil caloric intake that comes with it. That being said I have concocted a pretty sweet dilla! I feel that the BBQ sauce gives it a kick! I usually serve it with Pace's picante sauce and Fage 2% strained greek yogurt instead of sour cream. I love quesadilla but HATE the evil caloric intake that comes with it. Ingredients

    1 oz reduced fat chedder cheese
    1 quorn naked chik cutlet
    1 Tbsp Sweet Baby Rays BBQ sauce
    2 Tbsp onion
    2 Tbsp red pepper
    2 low carb tortilla

    Garnish: 1 Tbsp 2% Fage
    1 Tbsp Paces picante sauce

Directions

Chop up some peppers and onions and saute them with the quorn cutlet on medium heat.

Spread the BBQ sauce and cheese on the tortilla

Add the peppers, onion, and quorn

Put the dilla in the frying pan with a lil Pam on medium.

I use my tea kettle filled with water and some tinfoil to keep weight on top of the dilla, or you can buy a quesadilla maker.

I usually heat each side for abou 6-7 minutes.

cut in quarters and serve with the 2% Fage greek yogurt and Paces Picante Sauce.
