OMG, I can't believe I'm eating sweet potato!!! I got this recipe from foodnetwork.com and it is SO good! I tweeked it by removing the kosher salt and using 40% less sodium Taco Seasoning.
Number of Servings: 1

Ingredients

4 Sweet Potatoes, peeled and sliced like steak fries
    3 tbsp olive oil
3 tsp taco seasoning, 40% less sodium

Directions

Preheat oven to 425. In a large mixing bowl, drizzle oil over the potatoes. Add taco seasoning mix and toss to coat. Place fries in one even layer on two cookie sheets. Bake 10 minutes, turn and bake 10 more minutes. Fries should be soft on the inside and browned on the outside. I divided the recipe into 6ths for the serving size.

I found the taste was excellent but they came out limp. I changed the baking process to 15 minutes at 450 on the lower oven shelf and 10 minutes on the upper shelf and this batch came out very crisp and were so good. Thanks for sharing. - 4/22/09

Fabulous! I used only 1 tsp of salt and 1 tsp of taco seasoning to cut down on the sodium and they were still mighty tasty. Try also pairing them with a little bit of honey for dipping. :-) - 8/17/08

Delicious even without the taco mix, I just did it with salt. Also, chopping the sweet potato the other way into small discs works quite well and it is easier to chop. - 4/4/09

These are really yummy! I made these for myself and my partner and ended with a serving for left-overs. Only down-side is, like any fries, they don't keep too well as left-overs. Thanks! - 4/1/09

Tried them with the taco seasoning but prefer my original version I've always made...cut the sweet potatoes any way you like, toss them with a little sea salt and pepper and lots of dried basil with olive oil or olive oil spray and roast. Serve w/ roasted garlic/fat free mayo/cumin dip. - 4/19/09

I was short on time and tried to soften potatoes in the microwave before placing them in the oven for 5-10 minutes. Tasted ok but was not at all crisp. Parents, Hubby, and kids all disliked them.

However, I will need to find a better means of cutting them as it was strength training getting them into fries by hand. LOL!!
The whole family loved them... except my 11 yr old tht won't try ANYTHING new...

I liked this recipe and so did my DH. I am used to eating Sweet Potatoes - welll -- SWEET :-D but I did these as recommended with the Taco seasoning and they were good! I cut the oil and the seasoning to only 1 TBSP of each b/c I only used half of of a HUGE potato. Will try it on my daycare kids - 3/26/09

This is something I have made before without taco seasoning and all 4 of my kids will eat it- I plan to try it this week with the seasoning. One different thing I do is microwave the sweet potatoes in a dish w/ a little water to make cutting them easier. I leave the skins on & cut them thinner. - 3/23/09

Then I just put them onto the tray and back for about 20 Min.YUM - 4/24/09

  • I've made sweet potatoe fries with cajun spice rather than taco seasoning...also made a dip with it which is excellent 1/2 cup mayonnaise, 1 tbsp dijon mustard, 1 tsp lemon juice, and chili powder to your liking. This makes a lot but will keep well in the frige. - 10/7/09
