Pumpkin Butter

Ingredients

    1c. boiled, drained, mashed pumpkin meat (This is soggier than Libby's canned version.)
    1t pumpkin pie spice
    2T splenda

Directions

Combine ingredients and microwave on high for 5min. You'll notice a reduction in volume by half. Stir, scraping sides.

I microwaved an additional 2min then 3min--- all this in a stoneware bowl. It came out with a spread thick enough that it slid across the bottom of the bowl (and a plastic measuring cup) rather than sticking.

Yields: 8T, 120g
