Chicken w/Feta & Tomato over Orzo

Ingredients

    2 Tbsp Olive Oil
    1/2 Red Onion - chopped
    1 Large or 2 Small Cloves of Garlic - sliced
    1 Tsp. Oregano
    4 Thin Chicken Breasts (or 2 Large sliced lengthwise)
    1/3 c. Feta Cheese (try the different flavors)
    1 Roma Tomato
    8 oz. dry Whole Wheat Orzo

Directions

Saute onion and garlic in olive oil until softened. Sprinkle with oregano.
Cook chicken until almost done.
Add chopped tomatoes and put feta on top of chicken.
Cook for a few more minutes and then remove from heat and place on top of Orzo (cooked according to package directions).
