Chicken w/Feta & Tomato over OrzoSubmitted by: WILZEENYC
2 Tbsp Olive Oil
1/2 Red Onion - chopped
1 Large or 2 Small Cloves of Garlic - sliced
1 Tsp. Oregano
4 Thin Chicken Breasts (or 2 Large sliced lengthwise)
1/3 c. Feta Cheese (try the different flavors)
1 Roma Tomato
8 oz. dry Whole Wheat Orzo
Cook chicken until almost done.
Add chopped tomatoes and put feta on top of chicken.
Cook for a few more minutes and then remove from heat and place on top of Orzo (cooked according to package directions).
