Ingredients

baby spinach (about three hand fulls, chopped)
ricotta cheese - part skim (roughly 1 1/2 cups)
organic valley unsalted sweet cream butter (1 1/2 tbs)
Directions
heat cheese and butter together until creamy, add spinach until wilted and mixed well with cheese. Enjoy over any pasta :)
