Picata Sauce

Ingredients

    1 T. Olive Oil
    1 tsp. butter
    1 tsp. black pepper
    4 cloves garlic, minced
    2 shallots, finely chopped
    2 T. flour
    1/2 cup white wine
    1/4 cup lemon juice
    1 cup chicken stock
    1 T. dried parsley

Directions

Spray nonstick pan with cooking spray, drizzle 1 T. olive oil in pan. Heat on low-med low, adding butter, garlic & shallots. Stir & cook until soft, 3 min. Add flour, stir & cook for 1-2 min. Whisk in wine - reduce for 1 min. Whisk in lemon juice & chicken broth. Stir in capers & parsley & pepper. Serve over chicken & whole wheat pasta for a hearty meal!
