An quick one pot meal that is a hit for the whole family. You can't go wrong with cheese, corn and a bit of southwestern flair! A bit of spice to give it interest. Ingredients

    1 TBS Olive Oil
    1 cup onion, chopped
    1/2 cup green pepper, chopped
    1 chicken breast, chopped
    1 can cream of musroom soup
    1 can Rotel
    1/2 cup corn
    8 oz Velveeta (2%), cubed
    1/2 box Rotini (whole wheat), cooked

Directions

Saute onions and green peppers in oil in a large skillet. Add chicken and cook until outsides are white. Add soup, Rotel and corn, cook for 10 minutes. Add velveeta and heat until melted. Serve over cooked pasta.
