Yam and jam muffins with oat bran

Ingredients

165g (1-1/2 cups) oat bran
120g (1 cup) whole wheat flour
94g (1/2 cup) sucanat or brown sugar
3 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. ginger
4 eggs, beaten
2 cups pureed sweet potatoes
1 cup buttermilk
150g (1/2 cup) fruit jam or preserves
2 T. oil
Directions
Preheat oven to 375. Spray 24 muffin cups with non-stick spray. In a small bowl, combine dry ingredients. In a large bowl, whisk together all remaining wet ingredients. Dump dry into wet and stir just until mixed. Divide among the 24 prepared muffin cups. Bake for 20 minutes. Makes 24 muffins.
