Introduction

Number of Servings: 4

Ingredients

    Olive Oil, 1 tbsp (remove)
    Boneless Skinless Chicken Breast 4- (4oz)
    Onions, raw, 1 medium
    Red or Yellow Bell Peppers 1 medium
    Peas, frozen, 1.5 cup
    White Wine 1/3 cup
    Thyme, ground, .50 tsp
    Rosemary, dried, .25 tsp
    Poultry seasoning, .50 tsp
    Pepper, black, .50 tsp
    Salt, .75 tsp

Directions

1. Heat oil in medium nonstick skillet over medium-high heat. Add chicken and cook until brown. Turn and brown other side.
2. Meanwhile, see and cut peppers into strips and onions in wedges. Add to chicken along with peas and saute 2 minutes.
3. Add wine and seasoning to skillet and cover. WIne will begin evaporating quickly. When "brown bits" begin collecting in the skillet, the dish is done.
