Unstuffed Cabbage Casserole

Introduction

I came up with this because my husband loves Cabbage Rolls. But, they just took to much time. He loves it and it alot easier to make. I used whatever large can of tomatoes I have and regular rice if that's all I have. We like spices, so I always add red pepper flakes to ours. Number of Servings: 8

Ingredients

    1 Medium Head Cabbage
    1 Pound Extra Lean Ground Beef
    1 Medium Chopped Onion
    1 Finely Chopped Red or Yellow or Orange Pepper
    1 Cup of Minute Rice Uncooked
    1 Large Can Stewed Tomatoes or Diced
    - 1 Cup Water ( made need a little more)
    Salt and Pepper and Garlic to taste

Directions

Heat oven to 350 Degrees

Slice cabbage in half and core. Peel off large leaves only.

Coat a 2 quart baking dish with cooking spray and line with split cabbage leaves.

Coarsely chop the remaining cabbage ( It'll make about 3 cups) and add it to the casserole dish.

In frying pan cook beef and onions stirring constantly until browned. Drain if needed. Add pepper, rice tomatoes, water, salt, pepper, garlic to taste. If it seems to dry add a little more water. You need the liquid to cook the rice. Bring to a boil. Add the red pepper flakes if you like.

Spoon mixture over the cabbage. Cover tightly and bake for 45-60 minutes or until rice is done.

Makes 8 - 1 cup servings

Note: If you use rice other than minute time, Cooking time is longer
