Ingredients

    Extra Light Olive Oil, 3 tbsp
    Onions, raw, 2 medium (2-1/2" dia), chopped finely
    4 Mini Bell Peppers, sliced
    Roasted Garlic, 3 tsp
    Broccoli, fresh, 2 bunch, cut into florets
    Yellow Squash, 2 large, sliced
    Organic Low Sodium Chicken Broth, 1 cup
    Chicken Thigh, 4 thigh, bone and skin removed
    Red Ripe Tomatoes, 1 cup cherry tomatoes
    Cilantro, raw, 2 tbsp, chopped finely
    Parsley, 2 tbsp, chopped finely
    Spinach, fresh, 2 bunch
    Feta Cheese, 8 oz
    Cheese, Parmesan, Bella Rosa, 15 grams

Directions

Cook chicken until meat falls off bone and set aside. Once cool, remove meat from bone. Heat olive oit in dutch oven. Add onions, peppers and garlic; saute until caramelized. Add Broccoli and squash, saute 1 minute. Add chicken broth and cover. Cook until broccoli is fork tender. Remove from heat. Add rest of ingredients and mix well. Serve hot or cold.
Makes 12 1-cup servings
