Quick Vegetarian Chicken Vegetable Casserole

Ingredients

    1 cup chopped carrot
    2 medium potatoes chopped about 1" pieces w/ skin
    1 cup onion chopped
    3/4 cup sliced portabella mushrooms
    1 tbls. Olivio margarine
    1 cup 1% milk
    2 tsp. Veg-it Seasoning
    Black pepper to taste
    1 pkt. Hain Vegetarian Brown Gravy
    18 Strips Morningstar Chicken Strips
    1" thick slice Velveeta Cheese cut in to cubes

Directions

Preheat oven to 375 deg. F. Place chopped vegetables, cheese, veg. chicken strips in casserole dish. Whisk together milk, veg. gravy mix, veg-it seasoning, black pepper...pour in to casserole...put Olivio in as well. Cook for 1 hour in covered casserole dish with pan underneath in case of bubble over. About 45 minutes in to the cooking give it a stir & check potatoes & carrots for doneness...depending in the depth of casserole dish & size of your chopped vegetables will probably need another 15 or so minutes.`
