South Beach Thai Cabbage Soup

Introduction

Phase One friendly. Phase One friendly.
Number of Servings: 10

Ingredients

    6 c Low Sodium Chicken Broth
    8 oz Low Sodium V8
    1/4 c Rice Vinegar
    1/4 c Lime Juice
    3 tbsp Soy Sauce
    3 c Shredded Cabbage
    1/2 c green onion
    1.5 c Cauliflower chopped
    1 c sliced raw mushrooms
    2 c Bean Sprouts
    1 c chopped celery
    1 c diced tomatoes
    1 tsp grated ginger root
    3 cloves chopped garlic
    1/2 tsp lemon grass
    1/2 tsp thai chili sauce

Directions

Put everything in pot and simmer. I freeze in individual bags then add protein to it as I reheat. Some suggestions are chicken, prawns, beans.

When in Phase 2 can add pineapple to this.

  • I make similar but include kale and spinach and the chicken broth I use has the Thai flavors in it (Swanson Thai Ginger Infused Chicken Broth) a bit of a short cut. - 1/28/14
