Introduction

I came up with this soup after viewing many soups in different cookbooks that were just to high in fat and sodium I came up with this soup after viewing many soups in different cookbooks that were just to high in fat and sodium
Number of Servings: 8

Ingredients

    3 TBS EVO
    1 med. onion chopped
    2 medium carrots chopped
    32oz chicken broth
    3 cloves garlic
    2 bunches fresh broccli chopped
    1 C brown rice
    2 C non fat milk
    seasoning for taste(optional)

Directions

Saute chopped onion and carrots in the EVO, add chicken broth, rice, garlic and broccoli. Bring to a gentle boil and reduce heat to simmer until broccoli is tender. Move to blender or vita-mix and puree. Pour back into pot, add milk and seasoning.
Makes 8-1 cup servings.
