Egg White Omelette (Adapted from "Biggest Loser Cookbook")

Submitted by: MORGAN514

Introduction

This is delicious and easy to make, and just slightly adapted from The Biggest Loser Cookbook. Personally, I usually don't like eggs, but using egg whites with the garlic, onions, and veggies tastes delicious! Ingredients

4 Egg Whites (I used 3/4 cup "Just Whites" liquid egg whites)
3/4 cup Fresh Broccoli, finely chopped
    1 cup Fresh Spinach
    2 cloves Garlic
    3/4 cup Red Onion
    1/4 cup Shredded Cheddar Cheese
    1/8 tsp Pepper
    Salt to taste

Directions

In a non-stick skillet, cook garlic, onion and broccoli until onion becomes somewhat tender. Add spinach and cook until just wilted (about 2 minutes). Remove vegetables from skillet and put in bowl. Set bowl aside

In a small mixing bowl, add pepper to egg whites. Whisk egg whites until they just begin to froth a little. Pour in a small, non-stick skillet and cook (lift up edges as they cook, tip pan to allow liquid to run underneath and cook). Once set, flip the omelette. Get bowl of veggies and sprinkle on top of omlet. Sprinkle with cheese. Fold omelette in half and cover skillet, allowing cheese to melt.

Remove from heat. Salt to taste. Enjoy!
