Salmon w/Dijon Dill SauceSubmitted by: ONECALMMOM
4 6oz, salmon fillets, skin removed
1T olive oil
1-1/2T unsalted cold butter
1 small shallot finely chopped
1/2 c white wine
1T Dijon mustard
2T chopped dill (extra for garnish)
1 cuke, thinly sliced
In med. saucepan over med-hi heat melt butter, add shallot, cook till softened (1 min.) Add wine and cook until reduced by half (3 min), Reduce heat to low, whisk in mustard, dill, pepper. Cut remaining butter into pieces and add to sauce. Whisk in.
Serve Salmon, spoon sauce, garnish w/dill. Cukes on the side.
