Angel Hair with Slow Cooker Lentil Sauce

Introduction

I was looking for something to slow cook on my day off and came across this recipe, which I just happen to have all the ingredients for! I've "sparkified" it slightly from the original to lighten it up. Number of Servings: 8

Ingredients

    1/2 cup chopped onion
    1/2 cup chopped carrots
    1/2 cup chopped celery
    2 cups no-salt-added diced tomatoes
    1 cup tomato sauce
    3-4 oz lentils, rinsed and drained
    1 tsp dried oregano
    1 tsp dried basil
    3 cloves garlic, minced
    1/4 tsp red pepper flakes
    16 oz box angel hair pasta

Directions

1) Put all the ingredients except the pasta in the slow cooker and stir.
2) Cover and cook on low 8 to 10 hours, or on high 3 to 5 hours.
3) Cook pasta according to package directions
4) Serve and enjoy!

The original recipe said this served 4-6 at 230 calories per serving. Mine serves 8, with 213 calories per serving.

Coming back to comment after the meal. Our crock pot apparently cooks way hotter than this recipe anticipates. I put it on low as directed but after only four hours the edges were beginning to burn. I turned it down to just warm for another hour then turned it off completely. The sauce looked so thick I added a half cup of red wine to it - mistake. It was way too sweet for my taste. DH thought it was okay. The recipe I found said it could be made in a 4 or 5-quart crock, but it was too small an amount for my 6-quart. I think it would be good without the wine in it, and more oregano. Laurie
