Ingredients

4 servings Chef Meg's Roasted Salmon, Apple, Almond Pesto recipe
1/2 cup panko breadcrumbs (Japanese-style breadcrumbs)
1 tsp Dijon mustard
4 ounces Greek Style yogurt, plus 4 tsp for garnish
pinch black pepper
4 leaves green leaf lettuce
2 whole wheat sandwich buns (we used 100-calorie sandwich thins)
Tips

Directions
Flake the roasted salmon and mix with the apple-pesto mix. Combine the salmon and apples, bread crumbs, mustard, and yogurt in a large mixing bowl. Season with black pepper. Form into four 1/2 cup cakes. Preheat a nonstick pan. Coat with cooking spray. Cook patties just until warmed, about 2-3 minutes per side. Separate sandwich bread, layer with salmon patty, one teaspoon of Greek yogurt for garnish, and a lettuce leaf.
