Introduction

I have substituted ingredients to make Libby's less caloric. I used my own crust, so have more calories than frozen one would as I use crisco and a little real butter. Number of Servings: 8

Ingredients

    1/4 cup white sugar
    2T packed Brown Sugar Splenda Blend
    1/2 t. Salt
    2 t. pumpkin pie spice
    2/3 c. egg substitute
    15 oz canned pumpkin
    12 oz non fat evaporated milk
    CRUST:
    1 cup flour
    1/4 t. salt
    1 1/2 t. sugar
    6 T Shortening (crisco)
    1 T. Butter
    2 T Ice water
    9" pie crust (unbaked)

Directions

Make crust (or purchase pre-made). Mix sugars, spices, salt in small bowl. Put egg substitute in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evap milk. Pour into pie shell. Bake in preheated oven at 425 degrees for 15 minutes, reduce heat to 350 degrees and bake for 40-50 more until pumpkin is set in middle.
