Jerusalem Salad

Introduction

This is my husband's variation of a traditional Arabic salad. Tastes great on its own, or served with M'jadarah (lentils and rice) This is my husband's variation of a traditional Arabic salad. Tastes great on its own, or served with M'jadarah (lentils and rice)
Number of Servings: 15

Ingredients

    1 head romaine lettuce
    1 cucumber
    1 bunch parsley
    1 bunch radishes
    1 green pepper
    1 red pepper
    1 bunch scallions
    1 white onion (optional)
    several firm roma tomatoes (about 8)

    Dressing:
    olive oil
    lemon juice
    salt
    pepper (optional)
    mint (optional)
    sumac (optional, can be replaced with cumin)

Directions

Chop all vegetables (including lettuce and parsley) into relatively uniform, small pieces. Toss and add the dressing ingredients to taste (recipe calculated for 1/2 cup olive oil). Can be served as a side salad, or tastes great with M'jadarah (lentils and rice)
