Pork Roast Soup

Ingredients

    1 lb. Pork, fresh, loin, tenderloin, separable lean only
    6 rings sweet, red Peppers, chopped
    1/4 Yellow peppers (bell peppers), chopped
    10 Okra pods (3" long), cut in disks
    2 peled Carrots, cubed
    3 medium (2-1/4" to 3-1/4" dia) Potatoes, cubed with skin
    1/2 Eggplant, unpeeled, cubed
    2 tbsp chopped Onions
    .5 tsp black Pepper
    1 t Thyme

Directions

Cook pork overnight in crockpot on low. Cool; skim off fat. Cube, then add all other ingredients. Stir well and cover with water (about 4 cups). Cook all day on low.
