Shirred Dessert Eggs

Ingredients

    1 large whole egg
    2 egg whites
    1 t water

Directions

For each serving:

Spray a microwaveable dish with spray oil. Mix eggs and water in small bowl with wire whisk. Place plate in microwave and pour egg mixture onto it. Microwave 1 min. With a spatula, gently lift edges of partially cooked eggs. Cook another 30 seconds to 1 minute. Lift edges of egg again. Do it again until egg is completely cooked.

Fill and roll up the shirred eggs and place on individual dessert plate. Or roll up, place on plate, then pour topping over eggs.

Here are a variety of ideas for filling or topping (not included in caloric count):

*1/2 c sliced fresh strawberries (22.5 calories) and 2 T pressurized whipped topping (15.4 cal)
*1 medium banana sliced or mashed (108 cal) and 1 T chopped walnuts (87.7 cal) or 1 T slivered almonds (69.35 cal)
*4 oz Del Monte Lite Diced Peaches (50 cal); mix 1 T cornstarch (54.2 cal) in 1 T water; add to peaches and microwave 40 seconds; stir; zap another 30 to thicken
*2 T chocolate syrup (104.9 cal) and 2 T pressurized whipped topping (15.4 cal)
*1 T powdered sugar (31.1 cal) mixed w/1/2 t cinnamon
*2 T lowfat cream cheese (69.4 cal) and 1 T berry jam (55.6 cal)
*Mix 1 T powdered sugar (31.1 cal) w/1 1/2 t water and a few drops of either vanilla or almond extract
*6 oz MottĀ“s unsweetend applesauce, sprinkled w/cinnamon and 1/2 T chopped walnuts (43.85 cal)
