Bercy Sauce

Ingredients

    1/4 cup olive oil
    1/2 cup chopped shallots
    1 clove minced garlic
    1 quart White Wine
    1 gallon Water
    1/4 cup vegetarian chicken bullion
    1/4 cup cornstarch

Directions

In large stock pot, Saute garlic and shallots in olive oil. Add white wine. Bubble and reduce by half. Mix chicken base and water. add to stock pot. Bring to a boil. Mix cornstarch with a small amount of water. Add to sauce and simmer for 10 minutes. Strain out garlic and shallots. Can be refrigerated or frozen for use in Penne pasta recipe.
