Introduction

Cornbead made with whole grain cornmeal and whole wheat flour. Cornbead made with whole grain cornmeal and whole wheat flour.
Number of Servings: 10

Ingredients

    1 1/4 c medium grind cornmeal
    3/4 c whole wheat flour
    6T oil
    6T sugar
    2 eggs
    1/2 c soy milk
    4t baking powder
    1/4t salt
    1 c corn kernels

Directions

Preheat oven to 375 degrees.
Oil baking pan.
Mix oil, soy milk, sugar and eggs together.
In a separate bowl, combine cornmeal, flour, baking powder and salt.
Add dry ingredients to mix, then add corn. Mix until blended. Transfer to baking pan and bake until golden. About 25 minutes.

Makes 10 servings.
