This is very easy to make, but with huge taste! Fresh ingredients make this special. It's great when tomatoes are plentiful. It can be easily doubled, and can be frozen in single servings, with no loss of flavour. This is very easy to make, but with huge taste! Fresh ingredients make this special. It's great when tomatoes are plentiful. It can be easily doubled, and can be frozen in single servings, with no loss of flavour.
Number of Servings: 3

Ingredients

    4 ripe tomatoes, chopped coarsely (about 1 lb/250g)
    1 1/2 tbsp. red wine vinegar
    2 tbsp. olive oil
    1/4 cup thinly sliced onion
    1 clove garlic, minced
    fresh basil leaves, chopped or shredded (to taste, or minimum 6-8 leaves)
    salt and pepper to taste

    (approx 1/2 cup cooked pasta per serving)

Directions

Chop tomatoes. If they're especially juicy, you may wish to drain some of the juice off.

In a large bowl, whisk together oil, vinegar, salt and pepper. Stir in tomatoes, garlic and chopped onion. Add basil, salt and pepper. Serve over pasta. Top with 1 tbsp parmesan cheese.
