Spicy Chickpea Patties

Number of Servings: 16

Ingredients

    2 1-second sprays of vegetable oil (such as Pam)
    1 tsp. olive oil
    2 cloves of garlic, minced
    1 jalapeno pepper minced OR 2 tbsp. of pickled jalapeno, minced
    2 tsp. curry powder
    1 tsp. cumin
    1 19 oz can of chickpeas, drained and well rinsed (equals about 13 oz of chickpeas)
    1/4 cup chickpea flour
    1/2 cup dried breadcrumbs
    1/2 cup minced cilantro
    3 green onions, minced
    Juice of 2 limes (about 4 tbsp.)
    Salt to taste

Directions

Spray nonstick pan 1 second with vegetable oil and add olive oil. Over medium heat, saute onion, garlic, jalapeno, cumin and curry powder for about 3 minutes or until onion is soft. (Be careful to keep stirring, so that spices don't burn).

In food processor, process spice mixture for about 20 seconds. Add all other ingredients and process about 40 seconds, until mixture is well combined and forms a thick paste (You may need to add 1 or 2 tbsp. of water). Form into patties about 2 inches wide. This should make about 16 patties.

Spray nonstick pan with 1 second spray of vegetable spray. Saute patties until brown (about 4 minutes), then turn over to brown other side.
