Homemade pumpkin muffins (1 muffin = 1serving)

Introduction

If you use soy milk and soy yogurt, these are vegan. If you use soy milk and soy yogurt, these are vegan.
Number of Servings: 12

Ingredients

    1 3/4 cups flour
    2/3 cups sugar
    1 tablespoon baking powder
    1/4 teaspoon salt
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/2 teaspoon ginger
    1/4 teaspoon allspice
    1/8 teaspoon ground cloves
    1 cup pureed pumpkin (fresh or from a can)
    1 tablespoon soy yogurt
    1/2 cup soymilk
    1/2 cup vegetable oil
    2 tablespoons molasses

Directions

Makes 12 muffins.

Preheat oven to 400F. Line or grease a muffin tin.

In a medium bowl mix dry ingredients (flour through cloves). In a large bowl, mix pumpkin through molasses. Pour half the dry ingredients in, mix until just combined. Then pour remaining dry ingredients in, mix until just combined. Do not over-mix. Pour into muffin cups, bake for 20-25 minutes or until tops feel firm when pressed gently with a finger. Cool for 10 minutes on a baking rack.
