Honey Chicken Stir-Fry

Ingredients

    6 oz boneless skinless chicken breasts, cut into 1-inch pieces
    1 Tbsp minced garlic
    1 1/2 tsp Olive Oil, divided
    1 1/2 Tbsp honey
    1 Tbsp reduced-sodium soy sauce
    1/8 tsp salt
    1/8 tsp pepper
    1 cup broccoli florets
    1/3 cup mixed bell peppers, cut into strips
    1 tsp cornstarch
    1/2 Tbsp cold water

Directions

In a large nonstick skillet, stir-fry chicken and garlic in 1 1/2 teaspoons oil for 1 minute. Add the honey, soy sauce, salt and pepper. Cook and stir until chicken is lightly browned and no longer pink. Remove and keep warm.

In the same pan, stir-fry the vegetables in remaining oil for 4-5 minutes or until tender. Return chicken to the pan; stir to coat. Combine cornstarch and cold water until smooth; gradually stir into chicken mixture. Bring to a boil; cook and stir for 1 minute or until thickened. Serve with rice.

Yield: 2 servings.

    I made this for dinner tonight. I only added some seasoning to the chicken, a bit extra honey and onions. I also served it over rice cooked in chicken broth. It was very good - 5/20/10

  • Quick and easy. I didn't have fresh broccoli, so I used frozen, but I microwaved it until almost done and added it when I put the meat back in. I also added mushrooms, chopped green onions and zucchini. I didn't use the cornstarch and we didn't want rice. It was very good without the added carbs - 7/19/11

  • Really good! I used carrots and fresh green beans instead of bell peppers (personal preference), but stuck with it other than that. Kind of went off on my own for amounts (didn't realize it was for only 2 at the time!), but made it work! - 8/23/10

  • Very good, but next time we're going to add other vegetables too (maybe mushrooms, baby corn, and carrots). It has a nice, slightly sweet flavor. Not as good the second night for leftovers for some reason, but still good. - 12/31/09
