Spaghetti Squash Alfredo with Prawns

Introduction

Number of Servings: 4

Ingredients

    1 med Spaghetti Squash
    1/2 c Low fat Ricotta cheese
    1/2 c Fat free Cottage Cheese
    1/2 c chopped fresh spinach
    100 grams cooked Prawns
    2 cloves garlic
    4 oz shredded low fat mozzarella
    1 oz shredded parmason
    1 tsp Italian Seasoning'
    Pepper to taste

Directions

Cut spaghetti squash in half , remove seeds and steam in microwave until soft, put in bowl. Add remaining ingredients reserving a little mozza for the top. Place in square baking pan with non stick spray. Top with mozzarella and red chili flakes if you like heat. Bake until browning.
