Cake Mix Snow Balls

These are very moist, so keep in the fridge until ready to serve. Or you can freeze them and eat them straight from the freezer...very good! These are very moist, so keep in the fridge until ready to serve. Or you can freeze them and eat them straight from the freezer...very good!

Ingredients

    1 c. margarine
    2 c. skim milk
    2 c. granulated sugar
    1 chocolate cake mix (dry, whole container)
    4 c. quick cooking oats, dry
    4 c. shredded coconut, unsweetened
    2 c. shredded coconut, unsweetened (to coat balls)

Directions

In a medium sized microwavable bowl melt the margarine. Gradually mix in the milk and sugar. Microwave for 5 minutes, stirring every so often. Set aside.

Combine the chocolate cake mix, rolled oats, and the first amount of coconut in a large bowl. Pour the hot liquid mixture on top, and stir to combine. Cool in fridge for a couple horus, then cover with plastic wrap and leave in fridge over night.

Roll the dough into aprox. 1 inch balls and roll in the remaining amount of coconut to cover. Store in a covered container in the fridge or freezer.
