Introduction

The best recipes I found on here were either too many calories or too many substitutions. This recipe is a balance between the two. Everything in moderation. Number of Servings: 30

Ingredients

    3 eggs
    1 cup Applesauce, unsweetened
    1 1/2 cups Granulated Sugar
    1/2 cup packed Brown Sugar
    2 cups finely grated Zucchini
    2 tsp Vanilla Extract
    1 tsp Baking Soda
    2 tsp Cinnamon, ground
    1 tsp Nutmeg, ground
    1 tsp Salt
    1 1/2 cup white Flour
    1 1/2 cup Whole Wheat Flour

Directions

Preheat oven to 350 degrees. Lightly spray Pam Baking Spray into two loaf pans.

Mix ingredients in order listed. Pour batter into pans and bake at 350 degrees for 30-35 minutes. Slightly longer for 8 inch pans. Use toothpick or knife to check for doneness.

Serves 30
