Carrot-Pumpkin Muffins w/Cream cheese

Introduction

Number of Servings: 60

Ingredients

    2 cups whole wheat flour
    5 tsp pumpkin pie spice
    4 tsp baking powder
    1 tsp baking soda
    2 cup sugar
    2/3 c. margarine, softened
    1/2 c. brown sugar
    4 eggs
    4 large egg whites
    2-15 oz canned pumpkin
    2 cups carrot, finely shredded

    Topping:
    8 oz. light cream cheese
    1/2 c. sugar
    2 Tblsp skim milk

Directions

Prepare filling:
In bowl combine: flour, spice, baking powder and baking soda
In a large bowl combine: Beat sugar, butter and brown sugar until crumbly. Add eggs,egg whites, pumpkin pie mix and carrots. Beat until well blended. Add flour miture and mix until well blended. Fill muffin tins 1/2 full.
Prepare topping: Mix together cream cheese, sugar, and milk until smooth

Drop teaspoon -fulls of topping over pumpkin batter and swirl into muffin mix.

Bake 25-30 minutes or until tester comes out clean. Cool on wire rack.
