Mexican-Style Scrambled Eggs

Ingredients

    3 whole eggs
    4 egg whites
    2 small onions, sliced or minced
    1 tsp canola oil
    1 tsp coriander seed, ground
    1 tsp cilantro, dried
    4 tbsp salsa
    1 15 oz can black beans, rinsed and drained

Directions

Sautee the onions in the canola oil. Scramble whole eggs and whites in a separate bowl. Add to onions. Add salt, coriander, cilantro, and pepper. Cook until desired consistency. When finished, stir in black beans.

Makes 5 servings.
