Ingredients

    1 block soft tofu (can also be vacuum-packed silken tofu like Mori-Nu, or firmer tofu, depending on desired texture

    Juice of 1 fresh lemon, or to taste

    3 cloves of garlic, or to taste

    1 tbsp raw unsalted almond butter (or other nut butter)

    1 tsp dijon mustard, or to taste

    0.5 tbsp light or low-sodium soy sauce (or Bragg's Liquid Aminos)



Directions

Toss all ingredients in the food process or blender, and process until smooth and creamy. Adjust seasonings to taste. This also works as a good base for flavored mayonnaise, so experiment!

Will keep up to a week in the refrigerator.
