Reduced Fat Pancakes

Introduction

Sometimes all I want is fluffy original pancakes. This comes the closest I have ever found but with lower fat. Sometimes all I want is fluffy original pancakes. This comes the closest I have ever found but with lower fat.
Number of Servings: 14

Ingredients

    2 cups reduced fat all purpose baking mix
    1 1/4 cups fat-free skim milk
    1 large egg

Directions

Preheat griddle to 375 degrees Fahrenheit. (Griddle is ready when drops of water dance around a few seconds before evaporating.)

Stir all ingredients together in mixing bowl until blended.

Bake on hot, lightly greased griddle using slightly less than 1/4 cup batter for each pancake. Cook until bubbles break on surface. Turn; cook until golden.

Makes 14 pancakes.

To reheat: Microwave pancakes on HIGH until hot.

1 pancake per serving.
