Asian Chicken Salad

Ingredients

    1 chicken breast
    1/2 small onion
    3 T balsamic
    2 T tamari
    1 T peanut butter, reduced fat
    1 T honey
    1 tsp salt
    1 T red pepper flakes
    1 tsp ground ginger
    3 cloves garlic
    1/2 cup cooked broccoli
    1 serving broccoli cole slaw mix (salad)

Directions

Cook onions in balsamic for a few minutes. Add chicken, cut into strips, garlic, ginger, salt, lemon juice, and pepper. Cook through, add peanut butter. Mix until thoroughly coated. Add broccoli and toss. Serve over broccoli cole slaw mix.

Makes 2 servings.
