Basic Cheesecake

Introduction

We like to dress this cheesecake up with a dallop of homemade jam and whipped topping.

You can increse the filling amount by using the factor:
1 pkg. cream cheese + 1/4 c. sugar +1/4 tsp. vanilla + 1 egg

Ingredients

    Crust:
    1 1/4 c. graham cracker crumbs
    1/4 c. melted margarine

    Cake Filling:
    2 - 8 oz. pkg. cream cheese, softened
    1/2 c. granulated sugar
    1/2 tsp. vanilla extract
    2 eggs


Directions

For the crust:
Mix the graham crumbs with the margarine. Pat lightly into the bottom and up the sides of a pie dish. Set aside.

For the filling:
Beat the cream cheese, sugar, and vanilla, until well blended. Add the eggs, one at a time, and beat until smooth. Pour into crust.

Bake at 350 F for 40 minutes, or until centre is almost set. Cool on counter, then put in fridge for at least 3 hours, or overnight. Keep covered until ready to serve.
