Pineapple Vegetable Tofu Stir-Fry

Ingredients

    1 TBSP Smart Balance oil
    1 med carrot
    1/2 cup mushrooms (raw)
    1 stalk of broccoli
    1/4 red bell pepper
    1/2 cup of fresh pineapple (or frozen fresh)
    1/2 cup red onion
    1 block of tofu
    5 TBSP Teryaki sauce
    1 TBSP spicy thai chili sauce

    serve with wild rice, prepared separately

Directions

Fry tofu in oil, add all veggies in pan, add sauce, and tofu, etc. Simple, simple. Serve with wild rice. Yum!
