6-8 yukon gold potatoes peeled and quartered
2 leeks chopped
1/2 stick unsalted butter
1/2 tsp garlic paste
2.5 cups low sodium chicken broth
1 cup low fat milk.
1 cup chopped ham
mix corn starch into broth and mix with leeks. add potatoes and milk, bring to boil then reduce heat and leave to simmer til potatoes soften.
remove some of the potatoes, cut into bite sized pieces and put aside. blend remaining soup.
add back extra potatoes and chopped ham. return to heat and allow ham to warm through.
may need salt and pepper to season.
