Chicken Chili

Ingredients

    2 tbsp Olive Oil
    1lb ground chicken
    1 Large red peper chopped
    1 Medium onion chopped
    1 Hot pepper chopped 1/2 cup chopped celery
    1 28 0z can diced tomatoes
    1 can Red Kidney Beans drained
    1 can Campbells tomatoe soup
    2 Tbsp chili powder
    1/2 tbsp ground cumin


Directions

Cook chicken, pppers , onion , garlic in hot oil until chicken loses its pink colour and turns white. Add remaining ingredients and bring to a boil, stirring frequently to prevent sticking. Turn down heat to medium low and simmer for 15 minutes. Serve with your choice of shredded lowfat cheddar cheese, low fat sour cream, or plain yogurt. Makes 6 2 cup servings
