emergency pumpkin applesauce muffins



Introduction

this is my emergency recipe because I only had 1 can of pumpkin and amazingly I thought it would be enough for a double batch of muffins. *nutrition facts shown here are for mini muffins. double the facts for regular muffins. And multiply by four for texas muffins pans. If they turn out okay then you are reading this because I decided to share it.
*Be sure to note under cooking instructions the calorie content for each muffin: Texas muffin size, regular size, and mini muffin size. I give the approximate measurement sizes for each.

Ingredients

    3 cups plain canned pumpkin (not pie mix) *14 oz can is enough.

    2 medium eggs (you could get away with the other sizes I would think, I have used mediums in other recipes instead of larges, ect.)

    2 tsp baking soda

    2 tsp baking powder

    3 cups white whole wheat flour

    1 TBSP vanilla extract

    1 TBSP cinnamon, ground

    1 tsp Allspice

    1 1/3 cup water

    1/2 cup unsweetened apple sauce

    1 1/3 cups equivalent of sugar as a sweetner of your choice (I used liquid sweet n low for absolutely no calories)

    1 tsp salt

Directions

Note on bake time: Please begin to check around 20 minutes to get an idea of your final bake time. When your tester comes out MOSTLY clean but not completely then you are good to go. They need to stay moist and it all works out in the end!

prep and measurement:
combine all the wet ingredients in one bowl. Stir well. Then in separate bowl combine the dry. Dust the dry ingredients into the wet while stiring well.
spray muffins pans with non stick spray (using non stick cooking pans) olive oil spray works fine.

* for mini muffins use 2 Tablesppons in each pan. Yeild: 60 minis- a little fuller.

*for regular muffins use approximately 1/4 cup size scoops - a little fuller.

*for texas muffin pans use 1/2 cup scoops- even out as needed in each.

This rendering allows for you to make multiple types and count 2 minis as one regular, or one texas as two regulars, or 4 minis would be one texas for calculation. Boy I wonder if I am going to share this!

bake at 425 F. for about 25 minutes, begin checking around 20 minutes for a cooked muffin- using your tester you will need it to come out mostly clean-but dont overcook them. Wait till they cool to test them- then you will be seeing how they are supposed to turn out.


There are 60 mini muffin servings, or 30 regular muffin servings. or 15 texas muffins. Adjust your serving sizes to the nutritional info as needed.
