Mini Omelettes - Florentine

Introduction

Number of Servings: 12

Ingredients

    Omelette
    2 cups eggs, beaten (8 to 10 large)
    1 cup low fat milk (2%)

    Filling
    1 1/2 c. frozen spinach (thawed and drained)
    1/2 c. cooked mushrooms
    1/2 c. ham, chopped
    3 oz. cheddar cheese, shredded

Directions

Preheat the oven to 350F

Prepare standard size muffin tin by spraying with butter flavored non-stick spray.

Beat eggs and milk together. Flavor with salt and pepper. Set aside. Prepare filling by mixing together the spinach, mushrooms and ham.

Spoon about 2 tablespoons of filling into each prepared muffin tin. Top with about 1/4 oz. of the shredded cheese. Pour 1/4 cup of the egg filling into each muffin tin.

Place into the oven for 15 minutes or until cooked to desired doneness. Remove from oven and let the carry over heat finish the eggs.

If serving immediately, serve warm.

Alternatively, let cool in pans entirely, remove from pans to plastic wrapped plate. Put plate in freezer and let freeze individually for about two hours. Remove from plate and store in baggies. Reheat in microwave or oven for an easy grab and go breakfast.
